  • 1 teaspoons 1 egg yolk

  • 1/2 teaspoon 1/2 ground cinnamon

Coconut Weed Pudding Recipe

  • Add the milk, sugar, cornstarch, and egg and egg yolk to a large saucepan on a medium-high heat.
  • Whisk continuously until the mixture becomes thick and bubbles.
  • Remove the pan from the heat and add the vanilla and coconut extract to the mixture along with the cannabutter, whisking until melted. (Also, for this pudding, I’ve assumed you’ve already found the best cannabutter recipe for making THC-infused butter and have pre-made a batch.)
  • Add the sweetened coconut, continuing to whisk the mixture until the coconut is evenly incorporated throughout.
  • Cover the pudding with plastic wrap and transfer it to the refrigerator for cooling.
  • Serve up portions individually and topped with toasted coconut and whipped topping (optional). Alternatively, smash an entire bowl of coconut and marijuana pudding by yourself. 😉

The Recipe in Action!

Notes

  • On the note of weed edible strength and dosing, remember that cannabis-infused butter and oil can be swapped relatively interchangeably with standard butter oil. So if you wanted a weaker THC-infused dessert than a recipe demanding half a cup of cannabutter, you could instead use a quarter-cup of cannabutter alongside a quarter-cup of regular butter.
  • Not coconutty enough for you? Swap some regular milk with coconut milk in the ingredients for even more flavor!
  • Not healthy enough for you? Use more coconut milk and slam the final product with toasted seeds (e.g. chia, sunflower seeds, pepitas, flaxseed, etc.) and some fruits. Any leftover seeds and cannabutter can just be used in a little baking sidequest with our cranberry, orange, and weed bread recipe!

FAQs About Our Coconut Weed Pudding Recipe

Got some burning questions about coconut desserts and weed pudding recipes? I can’t blame ya!

There are a lot more takes on coconut pudding than, say, the recipe for red velvet cake and other locked-in household desserts. As one of the world’s widest-traveled sweets, coconut milk pudding and other coconut-based desserts come in all shapes and sizes. It’s the stone fruit that just keeps on giving!

Yes, pudding sets with coconut milk! And it’s a strong recommendation to add instead of milk if you want to reduce this coconut pudding recipe’s dairy content OR up its coconut flavor. It’s rich, it’s creamy, and it tastes like a tropical Caribbean-themed holiday!

To thicken coconut milk pudding, use a thickening agent. This can include agar-agar, gelatin, or the more common cornstarch (such as in this recipe for coconut pudding). Mix the chosen thickener with a small amount of cold liquid before adding it to the heated coconut milk mixture, and then stir continuously until the pudding reaches the desired thickness.

For this, you’ll need to start by making cannabis-infused butter or oil (AKA cannabutter or canna-oil). Then, just slap those goodies in any dessert recipe in place of regular butter or oil and you’ll be making weed edibles in no time! There are a lot of methods for infusing butter and oil with weed, however, I would strongly recommend considering an infusion device or cannabutter machine. It’s undoubtedly my top tip for anyone who wants to know how to make cannabutter fast.

The general experience tends to last 4 to 8 hours, but this is also highly variable depending on the strength of the edible as well as your own personal tolerance. Cannabis edibles and weed desserts usually take about 30 minutes to 2 hours to kick in but with a stronger and more sustained effect than vaping or smoking. For that reason, it’s advisable to wait until you feel something and, particularly, the peak of the high before you eat another serving.

The Origins of Coconut Pudding: The World’s Tastiest Traveler

Coconut pudding is a creamy and rich dessert with an equally deep history spanning numerous cultures and regions. Anywhere coconuts are abundant, such as the tropics of Asia, the Caribbean, the Pacific, and South America, coconut recipes, dessert ideas, and even drinks have flourished! In these regions, coconuts have been a staple ingredient for centuries, with coconut pudding naturally evolving as a cross-cultural albeit differently expressed dessert.

Around the world in 80 daze!

Examples of this include:

  • Southeast and South Asia: Thailand, The Philippines, Sri Lanka, and India all offer various spins on coconut pudding. Thailand, for example, goes for “tako” with a rich and creamy pudding experience, meanwhile, Sri Lanka and India (“watalappam” and “payasam” respectively) have developed a more spice-heavy and aromatic take on the coconut dessert recipe.
  • The Pacific: From Hawaii’s “haupia” to Fiji’s “vakalolo” which adds tapioca to the mix, most Pacific island cultures have concocted their own spin on coconut pudding too.
  • The Americas and Caribbean: Mexico, Jamaica, Puerto Rico, Brazil, and the list goes on! Mileage varies based on your location. For example, Puerto Rico’s “tembleque” is a more traditional coconut pudding recipe complete with cornstarch and sugar, but Jamaica has the “toto” which is more akin to a coconut cake with a pudding-like texture.

Got the point? Where there be coconuts, there be desserts WITH coconut. The world across, puddings and sweets made with coconut milk have evolved as naturally as our thumbs – there ain’t no single point of origin!

As for who invented coconut weed pudding? I dunno – probably some low-brow, instant gratification-chasing westerner. But y’know what?

For that, we thank them dearly.

And Then We Added Weed!

Nothing says bonafide munchies sesh like a marijuana pudding. Throw in some ginger space cookies and you’ll be soaring to the moon!

As they say, don’t knock it until you try it. Follow this coconut weed pudding recipe and you’re guaranteed a good time. But whatever you do, try this coconut and cannabis dessert recipe. Maybe stick a lime in it and drink them both together? After all, as a wise yet questionable individual once said…

“F**k around and find out. Be like the coconut. Because some of the best things in life you just gotta crack into.”
