Ingredients

  • 2 Cups of Gluten free flour mix

  • 1 tb spoon of Salt

  • 5 tb spoons of baking powder

  • 2 teaspoons of Gelatin

Directions

  • Bring the temperature of your oven to 350
  • Ensure to grease and flour an 8×8 inch loaf pan
  • In a medium bowl, whisk together the gluten free flour, salt, baking powder, and gelatin gum, using a wire whisk.
  • Using a mixer set on medium high, create the Cannabutter or margarine and sugar until fluffy.
  • Add the egg yolks and beat on medium-high until combined.
  • Add the orange rind and then a little of the flour.
  • Add orange juice. Mix. Repeat the process until all the flour and juice are mixed.
  • Stir in the cranberries using a wooden spoon.
  • Beat the egg whites until stiff and then fold them gently into the batter.
  • Pour in the batter onto the prepared pan then place it in the center of the oven.
  • Bake for about 50 mins.
  • The loaf should be golden in color.
  • When cool, cut the loaf into 12 slices.
  • For an extra zing spread, Cannabutter or margarine on the slice before eating.
